Note: I omit the dressing. I think it overpowers the nutty freshness of the cauliflower and delicate sweetness of the tomatoes.
Instead, I use a small amount of olive oil when roasting the cauliflower, and add lemon, fresh or dried oregano, & cracked pepper. Also, I roast the cauliflower for much less time – maybe 20 minutes.
